Ingredients:

  • 3 ripe bananas (mashed)
  • 1/3 cup (75g) melted butter
  • 3/4 cup (150g) sugar (can reduce to 1/2 cup if preferred)
  • 1 egg (beaten)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups (190g) all-purpose flour

Optional Add-ins:

  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup chocolate chips
  • 1/2 teaspoon cinnamon

Instructions:

  1. Preheat oven to 350Β°F (175Β°C). Grease a 4×8-inch loaf pan.
  2. In a large bowl, mash the bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the sugar, egg, and vanilla extract.
  5. Sprinkle in the baking soda and salt; mix well.
  6. Add the flour and stir just until incorporated. (Don’t overmix.)
  7. Fold in any optional add-ins if using.
  8. Pour the batter into the greased loaf pan.
  9. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let cool in the pan for 10 minutes, then transfer to a wire rack.
